Our Oloroso Sherry casks are specially selected by Master Distiller Graeme Millar. They play an essential role in shaping the character of our whisky. The rustic wood allows for increased interaction between the whisky and the sherry soaked staves resulting in our rich and complex flavour profile.

Once used in the maturation of Spanish Oloroso Sherry, a rich and nutty fortified wine, the influence of Oloroso Sherry Casks adds a layer of sophistication and depth.

Nose:
Dried figs and currants followed by Christmas spices such as nutmeg and cinnamon, dark chocolate, and a hint of fresh leather.
Taste:
Brown sugar, dark ripe cherries and black raspberry followed by bitter dark chocolate shavings and rich red apples.

Lingering oak notes, with a hint of leather and subtle clove spice.
